(for 2 Margaritas)
- 4 oz Tequila Blanco
- 1/4 Red Bell Pepper
- 1/4 Green Bell Pepper
- 1/4 Yellow or Orange Bell Pepper
- 1/4 Red Onion
- 4-6 Cherry or Grape Tomatoes
- A small bunch of Cilantro (about 2 tablespoons chopped)
- 1 Jalapeno (adjust based on spice preference)
- 2 oz Fresh Lime Juice
- 4 oz Margarita Mix
- Ice
- Tajín (for rimming the glasses)
- Additional lime wedges (for rimming and garnish)
Cocktail shaker
Muddler
Strainer
2 glasses (preferably margarita glasses)
Thin slices or small skewers of bell peppers
Small lime wedges
A sprig of cilantro
Cherry or grape tomatoes
- Wash all the vegetables and cilantro thoroughly.
- Finely chop the bell peppers and onions into small, thin strips or dice them finely. The finer the chop, the easier they will muddle and impart flavor.
- Slice the jalapeno thinly, removing seeds if less heat is desired.
- Halve the cherry or grape tomatoes.
- Roughly chop the cilantro.
- In a cocktail shaker, combine the chopped bell peppers, onion, jalapeno slices, halved tomatoes, and chopped cilantro.
- Pour in the fresh lime juice.
- Use a muddler to gently press and twist over the ingredients. You want to release their flavors, without completely pulverizing them.
- Run a lime wedge around the rim of each glass to moisten.
- Dip the rims into Tajín spread on a plate to coat.
- Fill the glasses with ice to the top.
- Add the tequila blanco and margarita mix to the shaker.
- Fill the shaker with ice.
- Secure the lid on the shaker and shake vigorously for about 15-20 seconds.
- Use a strainer to pour the margarita mixture into the prepared glasses, leaving the muddled ingredients behind.
- If desired, you can double strain to remove smaller particles for a smoother drink.
- Garnish with skewers of bell pepper slices, a small lime wedge on the rim, a sprig of cilantro, and/or a cherry tomato.
- Serve immediately and enjoy the vibrant flavors of your Fajita Margaritas!
Vegetable Skewers: Create mini skewers with different colored bell pepper pieces, a cherry tomato, and a small piece of jalapeno. Place on top of the glass for a fun and edible garnish.
Cilantro Lime Salt Rim: Mix finely chopped cilantro with Tajín and use it to rim the glasses for an extra burst of flavor.
Spicy Lime Wheel: Slice a lime into thin wheels, make a small slit in the middle, and insert a thin slice of jalapeno for a spicy lime wheel garnish.
